This organic and fair trade certified coffee is produced by small producers united in a cooperative (GRAPOS) in the south of Mexico, between 1100 and 1250 meters above sea level.
The cooperative, created in 2007, was created with the aim of improving the daily life of small coffee growers through training in agronomy, agri-food, but also in good social practices (particularly concerning the importance of school for the children of the producers).
It benefits from exceptional bioclimatic conditions that have enabled it to develop a rich and diverse agriculture. The Sierra Madre mountains offer good altitude and excellent volcanic soils. Chiapas generally produces a coffee with chocolate notes, medium body and bright acidity.
Its coffee plantations are generally family-owned, and there are an increasing number of solidarity cooperatives. All in all, it is a region that boasts an extremely rich culinary, cultural and geographical diversity.
