Sweet Potato Pecan & Fruit Loaf

This is one of the favourite recipes in Bear Market developed by the ladies over at purefood.ie . This is a delicious quick and easy sweet bread to put together. A moist loaf it is sweet yet spicy with flavours of nutmeg, mixed spice and cinnamon.
What you need:
150ml Sunflower Oil
200g Soft brown Sugar
300g Sweet potato peeled and grated
100g Pecans, chopped
180g Self-Raising Flour
1 teaspoons of Cinnamon
½ teaspoon of nutmeg
½ teaspoon mixed Spice
Pinch of salt
Preheat the oven to 150C.
Prepare a loaf tin lined with baking parchment. Beat the eggs in a large bowl, add oil and sugar and whisk again. Stir in the grated sweet potato and chopped pecans. Sift all the dry ingredients together and add to the mixture and stir to blend. Pour into the loaf tin and smooth the surface. Bake for 1 hour and check with a cake tester if it is cooked through. Allow to cool in the tin before removing and enjoy!
